Head Chef, leads our team in the kitchen and builds seasonal, nose-to-tail dishes inspired by flavours from around the world. We take every cut and use the whole animal to create, delicious and interesting menus. Minimal waste and maximum flavour.
We proudly follow a slow food ethos, taking pleasure from food but with a commitment to the community and the environment. That means we source the best quality ingredients working closely with small and independent producers, including our own family farm and Cornish fisherman, buying line caught fish directly from the dock.
Our poultry, livestock, eggs, vegetables & fruit come directly from Haye Farm. The farm’s owner, Harry Boglione, is the son of the owners of Petersham Nurseries. He and his partner Emily have been developing their 66-acre mixed organic farm set in the breathtaking rolling hills of East Devon since 2014.
Harry Boglione is the founder, owner and director of Haye Farm in Devon. As a child, he established the kitchen gardens at Petersham House and since then has developed his passion and knowledge for growing natural, fine produce. Harry and his family work hard to create sustainable food systems which support high levels of productivity, whilst encouraging an increase in biodiversity and wildlife.
Taking ownership of the farm in 2014, together with his partner Emily and their young family, Harry grows, harvests and sells only organic produce to his customers and is an avid supporter of the Land Workers Alliance. The aspiration of Haye Farm is to create sustainable food systems which support high levels of productivity, whilst encouraging an increase in biodiversity and wildlife. Haye Farm supplies Gloucester Old Spot pigs, chickens, rabbits, ducks and a whole host of delicious organic fruits and vegetables to all Petersham Nurseries restaurants, as well as many other prestigious restaurants.
